What's the Problem?
6 out of 10 chronic diseases such as diabetes, obesity, hypertension, colon cancer, are caused by poor diet. For this reason, more than 30 countries have a law that regulates the maximum amount of harmful ingredients to be used in food production. This had a high impact on the formulation of thousands of foods and beverages, leading to the need to replace these ingredients with healthy alternatives. As a consequence, there is a great challenge in maintaining the flavor for which consumers choose and enjoy food. At the same time, the growing trend towards natural, plant-based, clean-label, and environmentally-friendly products, jeopardizes current products and production processes, which are unattractive due to the high degree of contamination they entail, such as CO2 emissions, excessive water consumption, and deforestation.
