Precision fermentation for plant matrix

What's the Problem?

Plant-based foods arose with the objective of feeding a growing population in a healthy and sustainable way. 70% of these new alternatives are focused on substituting dairy, such as milk, yogurt and cheeses. However, plant-based diets can lead to health problems as some nutrients found exclusively in animals, such as vitamins and fatty acids, are lost. Added to this, consumers have few natural alternatives in the area of probiotics and functional foods, so health and well-being are limited to conventional dairy products.

How are they Solving it?

Food4You is using fermentation with lactic acid bacteria to improve plant-based foods with specific strains that can improve smell, taste and texture and people’s health since they are biofactories, that is, they can produce compounds of interest, such as vitamins and antioxidants, and, also, many have probiotic potential. Simultaneously, fermenting each plant substrate, such as soy, coconut or almond, is a challenge itself and different in each case, so the company is developing a biotechnological platform that designs and optimizes the combination of plant substrates with a library of unique strains widely studied to improve nutritional and functional quality, providing personalized solutions to each plant-based proposal.
